Does the AI assistant remember things, and can I change how it behaves?

Yes. The assistant has built-in memory and learns as it goes. In the assistant settings there is a Memories section the AI uses.

You can also create a memory by giving feedback. For example, if the Worker did something you did not like, tell it: do not do this, and next time a customer has this issue say this. The feedback is saved into the memories and used the next time.

You can edit the assistant's system prompt to make it act a certain way, and it has access to your whole library of files, so you can reference them in your requests.
